Blacksticks Blue Cheese Mash


500g potatoes peeled and cut into chunks
75g Blacksticks Blue cheese, crumbled or cut into small chunks
25ml Milk
1 tbsp Creme fraiche
Knob of butter
Salt & pepper to season
Fresh parsley to garnish (optional)


Potato peeler

Potato masher

Blacksticks Blue cheese is a fabulous last minute addition to hot pasta and potato dishes as melts quickly to impart its rich indulgent flavour and immediately makes the simplest dish special. We think this is the perfect blue cheese mash recipe, served with sausages or fish or just about anything!

Place the potato pieces in a large pan of salted water over a high heat. Bring to the boil, cook until tender (around 20 minutes) and drain. Place the potatoes back in the pan along with the milk, creme fraiche and butter and mash with a potato masher.

Crumble in the Blacksticks Blue cheese and fork through, allowing the cheese to melt. We like to leave gooey clumps of Blacksticks but you can blend more thoroughly if you prefer.

Season to taste and transfer the mashed potato to a warmed serving bowl. Garnish with fresh parsley if you want to be fancy!
